2 lbs tender chuck roast (stew meat)
1 liter whole milk
60 g butter
2 oz anchovies
2-3 cloves garlic
1 onion
1 T wine vinegar
salt and paprika to taste

Tie up stew meat and cook on low in a pot with milk, butter, anchovies,
garlic, onion, salt, paprika, and vinegar.

Cool to room temperature, slice then and place on platter.

Pass sauce through a foodmill and pour over meat.
